Having previously honed his skills at David Bouley’s former Tribeca Japanese restaurant Brushstroke, Chef Evan brings a wealth of culinary expertise with over 12 meticulously crafted courses in his sushi offering; Chef Evan orchestrates a seamless weaving between omakase and kaiseki dishes. His creations include delights such as soy-poached duck accompanied by a Japanese-style spinach salad, Japanese ginger, and a yuzu miso sauce, as well as a tantalizing stir-fry featuring sesame yuzu sauce, bamboo shoots, and watermelon radish.Chef Evan's fascination with the kaiseki experience blossomed while working alongside chef Yamada Isao at Brushstroke, a renowned collaboration between Chef Bouley and Japan’s Tsuji Culinary Institute. Inspired by these formative experiences, he embarked on a year-long global journey, immersing himself in diverse cuisines and cultures. This culinary odyssey led him to Alinea, where he refined his craft through staging, followed by a role as Sous Chef at the prestigious Hawaii Food and Wine Festival and a stint at Pure South Dining in Melbourne, Australia.

Before this, he was Executive Chef at Momofuku Ko from June to November 2023, after leading the kitchen as Chef de Cuisine from June 2021 to June 2023. His experience also includes heading R&D at Oyster Oyster in Washington, DC, and serving as Chef Tournant and Private Dining Chef at Momofuku Ko. James has also worked internationally, completing an internship at the renowned Noma in Copenhagen. Additionally, he has held key positions in Washington, DC, and Philadelphia, contributing to his well-rounded expertise.

Chef Pierre is an accomplished chef with extensive experience in top-tier kitchens worldwide. He currently serves as Chef de Cuisine at "FREVO" in New York under Executive Chef Franco Sampogna since May 2019.Previously, Chef Pierre worked in Paris at "Le Papillon" with Chef Christophe Saintagne in 2018 and at "L’Ecrin" in Hôtel de Crillon under Chef Christopher Hache. He also contributed to "Alain Ducasse le RECH" with Chef Anthony Denon and "Alain Ducasse au Meurice" under Chef Jocelyn Herland.His early career includes roles at "Lucas Carton" with Chef Julien Dumas and "Alain Ducasse au Plaza Athénée" as an apprentice under Chef Christophe Saintagne. Chef Pierre began his culinary journey at "La Toq’" in Nancy with Chef Bertrand Heckamnn and trained at Maison Stef in Nancy, "Auberge Saint Antoine," and "Auberge Saint Amour" in Quebec.
