During his tenure, he achieved an impressive 18% labor and 20% food costs while creating and costing menu items for all properties to ensure consistency and excellence.Previously, Chef Michael was the Executive Chef at Cave 1912 in Raleigh, NC, from May 2015 to June 2017. He collaborated on the kitchen layout, sourced local pottery for dinnerware, and managed daily operations. His career began at Volt Restaurant in Frederick, MD, and continued at Next Restaurant in Chicago, IL, where he embraced Michelin standards and modernist cooking techniques. Chef Michael's diverse experiences and dedication to quality have defined his career in the culinary world.
